Bars
Bars are a good example of the versatility of Peptan™ Hydrolyzed Collagens.
There will be several aims at using Peptan™ in nutritional bars. Peptan™ will act as functional ingredient providing texture and binding power to the formulation. As a nutritional ingredient, it will bring its nutrition features. It will also play a unique role in high protein bars that, most of the time, are based on blend of Hydrolyzed Collagen, soy proteins and milk proteins. Unlike the two former, Peptan™, a 97% pure protein, brings only protein to the formula, allowing jacking up its overall protein content.
Peptan™ s’ are applicable to bars targeting marketing segments such as weight management or sports nutrition. It can also simply be used as a meal replacer for on-the-go consumption. This is what Rousselot Application Experts had in mind when they developed a “Savory Bar” formula. The goal was to prepare a partial substitute for a meal that would be balanced and healthy. The formula includes cereals, slow carbs, proteins including Peptan™, minerals and vegetable extracts.
